I keep trying lobster on occasion, and now will only try it if fresh when in Maine, NS, etc. I just haven't developed an appreciation, even if prepared a variety of ways or someones "secret" method. Snow crab is the top of the list in my book. Still, good luck and guessing you will have success as so many do enjoy it but if just as good and easier to get on the plate, they will pay.

Thanks Pat. I don't "know" it will be successful but I have few doubts it will be and it is cool to be excited about business again. It has been a quarter of a century or so.

It isn't a money thing at all but that is a nice byproduct, it is more of a fun/lifestyle/legacy thing. Do I want to play golf for the rest of my life or roll the dice and try something new and exciting? The smart money is on golf. lol

Lobster... No thanks.

I avoid the larger shrimp because of the metallic aftertaste. Every lobster I've tasted had that same aftertaste.

Dallas is the first place it will be available since I have a sales rep that lives there. A national niche is greater than regional mass. Distribution is key and this is what I do. I will let you know and even arrange a sample once we get going.

I am sure I will. Are you freelancing? The initial packaging and copy is being done by an agency in Toronto but as you know there is a lot more to it than that.

Are you selling upscale retailer (Whole Foods, Trader Joes)?

Branding? Logo?

Distributor?

Assume you're doing brokers? Are they also doing your merchandising?

Frozen? Fresh, partially cooked, or fully cooked?

(Half of my 40 years of Market Research has been with CPG products - can you tell? LMK if you want any ideas to do concept testing on the cheap with consumers.)

I would love to do market research but I am self financed (thus the all in) and this bit got cut. It is a lot riskier without the research but there is somethng to be said for many years in CPG. That said, what I learned is that intuition is extremely faulty and you should do research if you can. I am in anyway and don't have the resources to make a lot of revisions.
I will certainly keep you in mind though as there are longer term plans along with the initial launch.
